Polyphenols are naturally occurring compounds found in plant foods such as tea, cocoa, vegetables, fruits and some extra virgin olive oils. Some polyphenols act as antioxidants, which means they neutralize harmful free radicals that can potentially damage the body's cells.

By definition, high phenolic olive oil contains at least 250 mg of polyphenols per kilogram.
